Mango Tea Cake
This is an eggless and butteries mango cake.We can make it very easily with less ingredients. Most of the ingredients are already in your kitchen.This is very tasty and moist mango cake.

Cook.time:40 minutes
Ingredients
All purpose flour - 1 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Salt - a pinch
Cardamom powder - 1/2 tsp
Mango pulp - 3/4 cup
Curd - 1/3 cup
Sugar - 1/3 cup to 1/2 cup
Oil - 1/3 cup
Vanilla essence - 1/2 tsp
Method
Preheat oven to 180 degree celsius.Line the loaf pan with parchment paper.Then Keep aside

In a mixing bowl put all purpose flour, baking powder, baking soda, salt and cardamom powder in a colander and sieve together 3 times.Then keep aside.
In another mix bowl add curd and sugar, then mix well until the sugar melts.
Add vanilla extract and oil mix well.
Then add mango pulp and mix it again.
Add flour mix in 2 batches and fold it gently. Do not over mix.
Keep this consistency.If the batter is thick the outside of the cake will crack as we bake.

Pour the batter into the prepared loaf pan.Then gently tap to remove air bubbles.
Bake for about 35-40 minutes or until a skewer inserted into the centre of a cake comes out clean.
Allow it to cool completely.Then cut into small slices.Serve it with a cup of tea.
Note
- Make sure to use all the ingredients at room temperature especially curd
- I used about 1/3 cup sugar.Adjust the amount of sugar according to the sweetness of mango.
