Wheat Urad dhal dosa recipe/Gothambu Uzhunnu dosa

Ingredients

1.Whole wheat flour-2 cup

2.Urad dhal-1/2 cup

3.Salt

4.Water


Method

Take 1/2 cup of urad dhal.Wash well and soak it for 4 to 5 hours.

 
Grind it well by adding 1/2 cup of water until it becomes like a smooth paste.

                                   

Mix wheat flour by adding small quantities of water. I took 1 and 3/4 cup of water for mixing this. You have to keep the consistency like below picture.

                                      
Grind 1/2 of the dough with urad dhal paste.No need to grind for long time.Then grind the remaining dough by adding a little water.

  

Mix well using your hand.Keep a little thick consistency.Now it is sticky but don't worry after fermentation it will become soft.Keep it for fermentation.Batter will take around 12 hours to ferment.When it is fermented add enough salt and mix well.

          

Pour 1 laddle full of  batter into the pan and spread it in circular motion.When the bubbles are coming cover it with a lid.

When it is cooked open the lid and add little ghee if you want then flip it and cook for few seconds and remove.The color will turn to a light  golden.Wheat dosa is ready.Serve hot with sambar and coconut chutney.


Tips

1.Don't add more water when it is grinding.If we add more water that does't help for fermentation.

2.Don't add cooked rice dosa will be sticky.

3.Keep the batter a little thick consistency, so after fermentation the batter will become correct dosa  batter consistency.

4.1 cup=240ml

5.I use golden temple wheat flour for making dosa.
